For a short time we are coming together with longtime friends, chotto, to bring our guests an ‘at home’ menu—a selection of comforting dishes personal to our chefs. These are dishes that tell our chefs stories: their childhood memories, travels and apprenticeships, recollections of summer festivals, traditions and family gatherings.
We’ve chosen to collaborate with chotto as it was a favourite of chefs Koichi Minamishima and Yoshiki Tano on their days-off. The pop-up served an ever-changing menu of Japanese cuisine influenced by ryokan cuisine—comfort food that drew the chefs back again and again. A friendship was forged and chotto’s chef Brendan Liew eventually joined the Minamishima team.
Together, we have created a selection of dishes special to us—beef short rib grilled over magnolia leaves and served with hoba miso, chirashizushi, A5 Japanese wagyu sukiyaki and seafood shabu shabu. The full menu is below, along with sake and wine selected by our sommelier.
We hope these dishes—which remind us of home—will transport you to Japan and bring you the same comfort and joy they do for us.
